Squash with Greens

Squash with Greens
Recipe type: Main Dish
Serves: 4

  • 2 small or 1 medium squash, halved and seeded
  • 1 large onion
  • 2 cloves garlic
  • 2 bunches of greens (mustard, chard, kale, or spinach)
  • Thyme
  • Salt
  • Black pepper
  • Butter

  1. Cook the squash by cutting them in half, seeding them, and putting them upside down on slightly greased cookie sheets in a 350 degree oven. They are done when you can pierce them with a fork.
  2. Put a little olive oil in a frying pan, and halve an onion and cut it into ¼ inch slices.
  3. Starting with the heat high and gradually turning it down as the onions carmelize and lose their moisture, bring the onions to a golden brown.
  4. Add the sliced garlic just as the onions are finishing, just enough to cook the garlic.
  5. Add thyme and salt.
  6. Take the greens and toss them in with a little oil, cooking just long enough for them to turn dark green and be fully wilted.
  7. Take off the heat and add two to four tablespoons of butter and mix them in until fully melted and incorporated.
  8. Fill the squash cavities with the vegetable mixture, top with ground pepper to taste.
