Spring Salad

Serves: 4

A delicious, simple salad.
  • 2 cups lettuce
  • ½ cup arugula, the stems trimmed off
  • 4 radishes, trimmed and sliced into rounds
  • 2 scallions, white and light green parts only, thinly sliced into rounds
  • 1 ball (10 ounces) fresh buffalo mozzarella, sliced
  • 2 tablespoons olive oil
  • salt and pepper

  1. Tear lettuce into a bowl.
  2. Add remaining vegetables and cheese.
  3. Drizzle oil and add salt and pepper just before serving.
