Scalloped Squash and Potatoes

Scalloped Squash and Potatoes
Recipe type: Main dish
Serves: 6
 

Ingredients
  • 3 c any winter squash, peeled and cut in chunks
  • 2 c diced potatoes
  • ⅓ c chopped onion
  • ½ c chopped cooked ham
  • ¼ c flour
  • 1 Tbsp. chopped parsley
  • 1 tsp salt
  • ¼ tsp pepper
  • ¼ tsp ground nutmeg
  • 1⅓ c light cream or milk
  • 2 Tbsp. butter

Instructions
  1. Place half of squash and potatoes in a greased 1½-quart casserole
  2. dish. Sprinkle on half the onion and ham.
  3. Whisk together together flour, parsley, salt, pepper, and nutmeg with
  4. cream or milk. Pour half the mixture over vegetables. Dot with half the
  5. butter. Repeat layers.
  6. Cover and bake at 350 degrees 45 minutes. Uncover and bake 10-15
  7. minutes, or until vegetables are tender.
